The Good Earth Peanut Company
Recipe #3 Contest Winner |
| Peanut Granola
3/4 cup brown
sugar
1/4 cup water
1/4 cup peanut butter
1 tablespoon vanilla extract
4 cups old fashion oats
1/2 cup coconut
1/2 cup sunflower seeds
2 cups roasted good earth peanuts
1 cup raisins
1 teaspoon salt
1 tablespoon cinnamon
1 egg
Combine brown sugar, water, peanut butter in microwave safe container
and heat on high 11/2 minutes to 2 minutes. When sugar mixture is heated
remove and add the vanilla. Meanwhile combine the rest of the ingredients
except egg in large bowl. Pour the sugar mixture over dry ingredients
and mix well. Add the egg if you want more of a crunchy texture. Bake
325 degrees for about 30 to 40 minutes stirring every 10 minutes to prevent
burning or sticking. Let cool, the granola will hard when cool, and add
favorite dried fruit if desired. Keep in airtight container for 2 weeks.
Great snack for kids.
