Red Potato Salad with Spicy Peanut Mayonnaise 2 pounds red-skinned potatoes, scrubbed and diced 1/3 cup Spicy Peanut Mayonnaise (recipe below) 1 small red onion, finely chopped 1/2 cup finely chopped celery 2 tablespoons parsley, chopped Bring a large pot of salted water to a boil, add the potatoes and cook until just tender when pierced with a sharp knife. Drain and let them cool. Prepare Peanut mayonnaise.   Mix diced potatoes, onion, celery, parsley and mayonnaise and gently mix until evenly blended.  Season with salt and pepper. Spicy Peanut Mayonnaise ½ cup roasted salted peanuts 1 large egg ½ cup olive oil ½ tsp salt ¼ tsp red pepper ¼ tsp black pepper ¼ tsp white pepper 2 cloves minced garlic 1 tsp grated fresh ginger Juice of ½ small lime Add all ingredients into a small food processor. Mix well until thick, but not too long because the blades will heat up the mixture. Chill before using. Makes approximately 1 cup. Greg Fontenot
