Peanut Soup 1 cup peanuts (roasted and unsalted) 3 cups water 1 teaspoon ginger paste 1 tablespoon lime juice 3/4 teaspoon salt or as per taste 1 teaspoon oil 1/2 teaspoon cumin seeds 1-2 green chili or as per taste (chopped) 1 tablespoon cilantro chopped 1 teaspoon shredded coconut (sweetened) Place peanuts, ginger, and 1 cup of water in a blender to make a puree. Add the puree with two cups of water, lime juice, and salt in pot. Bring to boil and reduce heat. In small pan heat oil and add cumin seeds. Let it sizzle and change color to dark brown. Add chilies and saute for a 20 seconds. Remove from heat and pour the spice infused oil in the boiling pot. Finally add chopped cilantro and coconut and remove from heat.
