Peanut-Crusted Grilled Scallops with Pomegranate Glaze */Serves Four/*// *Ingredients:* Pomegranate Glaze: 1 cup Pomegranate syrup 1/2 cup Fresh orange juice 1/8 cup Honey Scallops: 2 lbs scallops 2 Tbs Olive Oil Salt and Pepper to taste 1 cup toasted and coarsely ground unsalted Good Earth Peanuts ** Mix all the ingredients together for the Pomegranate glaze in a saucepan and bring to a simmer. Simmer until the glaze coats the back of a spoon**Transfer to a small bowl and slightly cool. ** Heat the grill to medium. Toss the sea scallops with the oil in a medium-size bowl and lightly season with salt and pepper. Grill the scallops for 4 minutes per side, or until dark golden brown and firm. Swirl each scallop in the warmed glaze and transfer to a platter. Sprinkle the peanuts on top and turn scallops to sprinkle the other side with peanuts to coat. Serve immediately.
