Asian-Style Cucumber Pickle 1 teaspoons salt 2 teaspoons sugar 1/2 cup rice wine vinegar 2 cucumbers, peeled, seeded, and cut in thin strips 2 carrots, peeled and grated 2 scallions, white bulb and 2 inches of the green part, cut in circles 3 small chili peppers, seeded, finely chopped 2 tablespoons chopped peanuts In a small saucepan, heat the salt, sugar, and vinegar for about five minutes, until the salt and sugar dissolve. Allow to cool. Add the cucumber slices, scallions, peppers, and peanuts to the vinegar mixture. Chill in a small covered bowl. Serve with hamburgers, hot dogs, or Asian-style chicken sandwiches made with stir-fried chicken strips. Lesley Pew
