Thai Pizza

    2 cooked chicken breast (I just bake them in the oven with a little hoison sauce), cut into bite-size pieces.
    1 1/2 tablespoons soy sauce
    1 tablespoon cider vinegar
    2 teaspoons Asian sesame oil
    1 1/2 teaspoons minced peeled fresh ginger
    1 1/2 teaspoons Asian chile paste
    1/4 cup creamy peanut butter
    2 teaspoons sugar
    Combine all above ingredients and set aside.
    2 carrots (grated)
    1 cup bean sprouts
    2-3 green onions, chopped
    cheese (I''ve been using mozzarella, but any mild white cheese would probably work)
    1/4 cup chopped cilantro
    1/4 cup chopped peanuts

Top your favorite pizza crust (Becca''s version worked perfectly for this) with the Asian sauce. Top with grated carrots, bean sprouts, onions and chicken. Top with cheese and bake. (I baked mine for about 20 mintues at 450F. You really just need to cook the crust) Right before serving, sprinkle with cilantro and peanuts and crushed red pepper.

The sauce is also good as a warm Asian slaw. Just saute some carrots and cabbage until crisp tender. Remove from heat and toss in a chopped cucumber and toss with the dressing.
