St Patrick's Day Peanut Treats

Peanut Leprechaun Clusters

    1 cup white chocolate chips
    1 ½ teaspoon vegetable oil
    8-10 drops green food coloring
    1 cup salted peanuts

Heat the chocolate chips in a double boiler until softened. Stir in the vegetable oil and continue heating until the mixture is fully melted. Add the food coloring and remove the mixture from heat. Stir in the peanuts until fully coated. Spoon the mixture into clusters on a baking sheet covered in wax paper. Chill until clusters are firm.

Peanut Pot O' Gold

    2 cup unsalted peanuts
    1 cup sugar
    ¼ cup water
    3 tablespoon unsalted butter

Put the sugar and water in a saucepan. Swirl the pan over low to medium heat until the sugar dissolves. Turn heat to high and boil the mixture covered for 2 minutes. Uncover and continue boiling until the mixture darkens around the edges. Swirl the pan again by the handle until the mixture darkens and starts to smoke. Remove the pan from heat and add the butter, stirring until it melts. Stir in the peanuts until they are fully coated. Spoon the mixture out carefully on to a baking sheet covered in wax paper to form very small clusters (1 to 5 peanuts). Chill until hard. Break up the clusters into individual golden peanuts.

Serving Instructions

Place the golden peanuts in a decorative bowl to make the Peanut Pot O' Gold. Set the Peanut Pot O' Gold in the middle of a large plate and arrange the green Peanut Leprechaun Clusters around it. Enjoy a sweet St. Patty's Day treat!
