Spicy Peanut Mayonnaise

    ½ cup roasted salted peanuts
    1 large egg
    ½ cup olive oil
    ½ tsp salt
    ¼ tsp red pepper
    ¼ tsp black pepper
    ¼ tsp white pepper
    2 cloves minced garlic
    1 tsp grated fresh ginger
    Juice of ½ small lime

Add all ingredients into a small food processor. Mix well until thick, but not too long because the blades will heat up the mixture. Chill before using.
Makes approximately 1 cup.
Serve as a dip with fresh vegetables or with grillled fish.
