Salmon in Peanut Sauce

    1 cup of yogurt
    1 TB of lemon juice
    1-2 TB water
    ¼ cup fresh chopped basil (or 2 teaspoons of dried
    basil)
    ¼ cup fresh chopped mint (or 2 teaspoons of dried
    mint)
    Salt to taste
    Hot chili powder to taste (optional)

Lightly broil peanuts for 3-4 minutes. Rinse fish fillet and dry it w/ paper towel.

Put all ingredients (except for fish) in blender and mix it. Add more water if necessary to achieve a smooth paste. Rub it all over the fish and let it marinate for at least 30 minutes.

Pre-heat oven broiler and broil it for 2-3 minutes on each side depending on your preference. For well done, cook it for 3-5 min. per side.

Serve it with jasmine rice and a salad
