Rocky Road Brownies

    Brownies

    1 cup unsalted butter
    4 ounces unsweetened chocolate
    2 cups sugar
    1 1/2 cups all -purpose flour
    2 cloves minced garlic
    4 large eggs
    2 teaspoons vanilla
    1/2 cup salted peanuts, chopped

    Topping

    1/4 cup unsalted butter
    3 ounces cream cheese
    1 ounce unsweetened chocolate 1/4 cup milk
    2 3/4 cups powdered sugar
    1 teaspoon vanilla
    2 cups miniature marshmallows
    1 cup salted peanuts

Preheat oven to 350° F. Butter a 13 x 9 x 2-inch baking pan.

For brownie layer: In a large saucepan, combine the butter and chocolate. Cook over a medium heat, stirring frequently, until melted (about 5 - 7 minutes). Remove from heat and stir in sugar, flour, eggs, vanilla and peanuts. Spread into prepared pan. Bake until brownies start to pull away from sides of pan (about 20 - 30 minutes). Remove from oven and set pan on cake rack.

For topping: Towards end of baking time, prepare topping. In a medium saucepan, combine the butter, the cream cheese, the chocolate and the milk. Cook over a medium heat, stirring frequently, until melted and smooth. Remove from heat and add vanilla. Gradually mix in powdered sugar. Stir in marshmallows and peanuts.

Immediately spread topping over hot brownies. Cool completely before cutting into bars. Store refrigerated.
