Peanut Toffee Treats

    Saltene crackers
    1 C sugar
    1 C butter
    1 12 oz pkg chocolate chips
    1/2 C finely chopped cooked peanuts

Lightly spray jelly roll pan with non-stick cooking spray. Line the pan with saltine crackers. Boil 1 cup sugar and 1 cup butter for 5 minutes. Pour over crackers and bake at 350 degrees for 20-25 minutes (just when it starts to turn brown - do not overbake). Turn off oven. Sprinkle chocolate chips on top. Return to oven for approximately 2 minutes - or when chocolate begins to melt. Remove from oven and spread melted chocolate chips evenly. Top with chopped peanuts. Refrigerate until hard. Break into pieces.
