Harrington Peanut Sauce

I make a recipe that is pretty straight forward. We have a pasta shop nearby that sells fresh smoked mozzarella ravioli's. I make a peanut sauce for the base: I never use the recipe, I just start adding these ingredients until it seems right to me. If it gets too hot or too salty, I will add a little sugar for balance. It's actually very tasty and is good with chicken as well!

    1 TBSP Minced gingerroot
    3 Cloves Minced garlic
    3 or 4 TBSP Chunky peanut butter (add enough to thicken the sauce to your preference)
    1.5 - 2 TBSP Dark soy sauce
    1 TSP Chinese chili paste
    1 TSP Sesame oil
    3 TBSP Chicken Stock
