Breakfast Peanut Rolls

    1/4 oz package dry yeast
    1/4 cup warm water
    1 cup milk, scalded
    1/2 cup peanut butter
    1 cup salted peanuts, chopped coarsely
    3 1/4 to 4 cups all purpose flour
    1/4 cup melted shortening
    1/2 cup sugar
    2 teaspoons salt
    1/2 teaspoon nutmeg

Soften yeast in water. Add milk, salt, sugar, shortening, eggs, nutmeg, and peanut butter. Beat well. Add flour to make a stiff dough. Knead on floured board until smooth. Put in large bowl to which vegetable oil has been added, turn to coat both sides. Cover and let rise until double, about one hour. Return to floured board; divide into 16 pieces. Form into rolls; place into pan which has been sprayed with non stick cooking spray. Sprinkle with peanuts. Cover and let rise 30 muinutes. Bake in 450 degree oven for 20 minutes. Remove from oven and brush with melted butter or margarine. Makes 16 rolls.
