Virginia Peanut Cookies
1 cup shortening 2 eggs 1 tsp. vanilla 2 cups flour 1 tsp. baking soda 1 1/2 cups old-fashioned oatmeal 2 cups salted Virginia peanuts Cream sugar and shortening. Add eggs and vanilla. Mix well. Add flour and baking soda. Mix well. Stir in oatmeal and peanuts. The dough will be very stiff. Roll into balls the size of a walnut and place on cookie sheet 2 inches apart. Bake at 350 degrees about 10 minutes. Do not overbake. Margie Powell |
