Refreshing Summer Peanut Salad
1 Tablespoon sugar 2 Tablespoons fresh lemon juice 2 tablespoons fresh grapefruit juice 1 tablespoon orange juice 1 Tablespoon vegetable oil Dash salt Dash pepper Whisk all ingredients for dressing together in a small bowl. Set aside
2 cups cucumber, peeled and sliced 1 cup red bell pepper, cut into strips 1/2 cup orange pepper, cut into strips ½ cup julieneed carrot ¼ cup red onion, chopped 1 1/2 cups fresh corn right off the cob. (if not available you can use canned) 1 tablespoon chopped fresh mint 4 tablespoons finely chopped peanuts Place all ingredients for salad in a large bowl except for peanuts. Add dressing and toss to coat. Sprinkle salad with peanuts. Serve immediately. 4 to 6 servings Donna Isch |
