Spicy Asian Peanut Dressing

3/4 cups all natural peanut butter
    3 tablespoons soy sauce
    2 tablespoons sesame oil
3 1/2 tablespoons rice wine vinegar
    1 tablespoon finely chopped garlic
    1/2 tablespoon finely minced ginger
2 1/2 teaspoon Asian chili paste or dried hot red peppers
1/2 tablespoons hoisin sauce or to taste
    6 tablespoon fresh lime juice
    1/4 cups water
    2 tablespoons water
    2 tablespoons sugar
    1 tablespoon chopped green onions

In a medium sized bowl, whisk all ingredients until smooth. If not using immediately, transfer sauce to a jar with a tight-fitting lid. Sauce keeps, covered and chilled 1 week. Use the water to thin sauce to desired consistency. This is good thick on noodles or with fish or thinner as a salad dressing. You can adjust the heat and sweetness with the peppers and sugar.
