Shrimp Fried Rice with Roasted Peanuts

    8 oz. cleaned and deveined shrimp
    5 cups cooked rice with salt
    8 oz. frozen mixed vegetables
    1/2 cup any vegetable oil
    1 teaspoon salt
    2 tablespoon red chilli (less for mild)
    1 cup roasted peanuts
    3 eggs whipped

Fry the eggs in oil and take it out and cut into pieces. In the same skillet with oil, cook all the ingredients except cooked rice and eggs for 25 to 35 minutes over medium heat. Add the cooked rice, eggs and stir for 10 mintues. Serve hot.
