Roasted Peanut and Mustard Green Salad

    2 1/2 cups of washed and chopped mustard greens
    2 large shallots chopped or diced
    4 cups of Roasted peanuts
    3 1/2 cups of Roasted peanuts chopped very fine
    2 1/2 cups of olive oil
    2 teaspoons of salt and pepper.

In a large bowl add 2 1/2 cups of washed and chopped mustard greens, 2 large shallots chopped or diced and 4 cups of Roasted peanuts.

In a medium bowl add 3 1/2 cups of Roasted peanuts chopped very fine, 2 1/2 cups of olive oil and 2 teaspoons of salt and pepper.

Add the roasted peanuts vinaigrette over the mustard greens, chopped or diced shallots and very fine chopped roasted peanuts.
