Red Potato Salad with Spicy Peanut Mayonnaise
INGREDIENTS:
2 pounds red-skinned potatoes, scrubbed and diced
1/3 cup Spicy Peanut Mayonnaise (recipe below)
1 small red onion, finely chopped
1/2 cup finely chopped celery
2 tablespoons parsley, chopped
Bring a large pot of salted water to a boil, add the potatoes and cook until just tender when pierced with a sharp knife. Drain and let them cool. Prepare Peanut mayonnaise. Mix diced potatoes, onion, celery, parsley and mayonnaise and gently mix until evenly blended. Season with salt and pepper.
DRESSING:
½ cup roasted salted peanuts
1 large egg
½ cup olive oil
½ tsp salt
¼ tsp red pepper
¼ tsp black pepper
¼ tsp white pepper
2 cloves minced garlic
1 tsp grated fresh ginger
Juice of ½ small lime
Add all ingredients into a small food processor. Mix well until thick, but not too long because the blades will heat up the mixture. Chill before using.
Makes approximately 1 cup.
