PEANUTTY CHICKEN FAJITAS

    4 or 5 large skinless boneless chicken breasts
    1 cup finely chopped peanut
    1/2 cup panko bread crumbs
    1 onion - slivered
    1 red and green bell pepper - slivered
    1/4 tsp garlic powder
    2 tsp fajita or taco seasoning - fajita works best
    1 egg- beaten
    2/3 cup milk
    1 tbsp jalapeno jelly - optional
    oil, salt, pepper

Slice chicken into long slices. Mix together peanuts, bread crumbs, 1 tsp fajita seasoning, and garlic. In bowl mix egg, milk, and jelly (if using) Coat chicken with egg mixture then peanut mixture. Heat skillet with oil, and cook chicken pieces till golden brown. Take out and set aside. In another skillet heat oil add onions, peppers, cook till semi-soft, add chicken and remaining seasoning into pan. Heat all together. Serve mixture in warm flour tortillas with favorite salsa, and extra roasted crushed peanuts, and cilantra (optional).
