Peanut Stuffed Baked Fish

    4 to 5 pound fresh dressed fish
    2 tablespoon old bay seasoning
    1/2 cup slice onion
    1 cup Good Earth Peanuts, chopped
    1/4 cup butter, chopped
    1/4 cup chopped chives
    1/2 cup chopped chives
    1 tablespoon old bay seasoning
    1/2 cup butter, soften
    Garnish with 1/2 cup thin sliced lemon.

Preheat oven to 350F. Lined a baking pan with foil. Place clean fresh dressed fish in pan. sat an side. In a bowl, mix 2 tablespoon old bay seasoning, slice onion, peanuts, 1/4 cup butter and 1/4 cup chopped chives, Mix well. Put mixture inside of the fish. closed. Place fish in baking pan. Sprinkle 1/2 cup chives, old bay seasoning and butter on top of fish. Covered and Bake for 35 minutes. Uncovered bake until fish flakes easily when tested with a fork.

I serve this with Cole slaw and corn bread.
