Peanut Pie
1 c. dark corn syrup 1/2 c. sugar 1/2 c. peanut butter 1 tsp. vanilla extract 1 c. peanuts 1 tsp. salt 1 (9") pie shell whipped cream Beat eggs, corn syrup, sugar, peanut butter, and vanilla until smooth and thickened, about 5 minutes. In a separate bowl, toss peanuts and salt. Stir in salt/peanut mix and blend. Pour filling in unbaked pie shell. Bake at 400 for 15 minutes, then reduce heat to 350 and bake until knife inserted in center comes out clean, 30-35 minutes.
Cool completely before serving. Top each slice with whipped cream. J. Davis |
