Peanut Ginger Cole Slaw

    Dressing:

    2 TB light corn syrup
    2 TB sesame oil
    1 cup mayo
    1/4 cup rice wine vinegar

Mix together and set aside.

    Salad:

    1 head of green cabbage (washed and sliced thin)
    1/2 head of red cabbage (washed and sliced thin)
    2 TB crystalized ginger chopped
    3 carrots (peeled and grated)
    1 bunch cilantro (washed and chopped)
    1 bunch green onions (washed and chopped)
    1 cup roasted, salted peanuts

Add the dressing and mix well before serving.
Serves 6-8
