Peanut Flan

    1 1/3 cup of fresh peanut roasted (place in a frying pan with 1 teaspoon of butter stirring until roasted)
    Let them cool and grind it in a food processor or chop very finely

    1 can of condense milk
    1 can evaporated milk
    4 eggs
    1 tablespoon of vanilla or more to taste
    1 pinch of salt optional

    For the mold,
    one 12 X 8 size
    2 cups sugar
    2 table spoons water

Place in fry pan and stir until melted and with a gold color cover the mold all over the bottom and sides and let it rest until coated evenly

In blender place eggs milks, vanilla, peanuts,and salt blend until all well mix, pour on top of the coated mold, and place in a bigger pan for a double broil effect and place water up to the middle of the flan mold, cook at heated oven at 350 for an hour or until a tooth pick inserted in center comes out dry.

When done let rest in the refrigerator for at least one hour before serving. Then turn upside down in a plate, can be garnish with more roasted ground peanuts on the sides and some in top, delicious enjoy.
