Peanut Dressed Pancakes
Dressing:
3/4 cup dry roasted peanuts
1/2 cup dried coconut powder
1/2 cups sesame seed
1 cup firmly packed brown sugar
1/2 cup water
Pancakes:
2 cups self rising flour
1 cup butter milk
1/2 cup sour cream
1 cup 2% milk
2 tablespoons powdered white sugar
1 sticks or 1/2 cup butter ( melted to liquid)
Mix flour, buttermilk, sour cream, milk and white sugar. Blend thoroughly in a blender or by hand. Set aside for 2 hours in a big bowl.
In the mean time dry roast sesame seed lightly until it gives out aroma. Dry roast coconut powder for 30 seconds on medium flame. Powder peanuts coarsely in a mixer. Add sesame seed and coconut to the mixer. Pulse on low speed for 20 seconds. Add brown sugar. Mix until all the ingredients are mixed thoroughly. Add water to peanut mixture and run the mixer for another minute. Collect the pasty mixture in a bowl.
Add a teaspoon of butter onto the heated non stick pan. Pour 1/2 cup batter and spread it a little. Flip the pancake when it turns golden brown. When the other side also is cooked to golden brown, turn it again and spread 2 tablespoons peanut mix and press lightly with the spoon while it is still in the pan. Lift it onto the serving plate with a spatula. Clean the pan with a wet cloth after each pancake. Serve warm. Makes about 15 pancakes.
