Peanut Avacado Salad

    1/2 cup ginger vinaigrette
    1 cup peanuts
    6 cups baby greens
    1 Avocado, cubed
    1 cup cherry tomatoes, halved
    1 yellow pepper, sliced

Add the vinaigrette to the salad bowl. Add peanuts, stir to coat. Add baby greens, avocado, tomatoes and yellow pepper. Stir gently until coated. Serve with toasted baguette slices drizzled with olive oil. Serves 4.

NOTE:I use my favorite store bought vinaigrette but if you prefer you can make a homemade vinaigrette.
