Microwave Maple Peanut Brittle

    1 ¼ C White Sugar
    1 1/2 C Maple Syrup
    1 ½ C Light Corn Syrup
    2 C Fresh Peanuts
    1 ½ Tablespoon Butter
    ½ Tablespoon Cinnamon
    1 ¼ Teaspoon Baking Soda
    1 ½ Teaspoon Vanilla

1. Combine Sugar, Maple Syrup, and Corn Syrup
2. Cover with damp paper towel and microwave for 4 minutes on full power. Stir.
3. Heat 3 minutes more on full power
4. Stir in nuts and butter microwave for 45 seconds
5. Stir baking soda, vanilla, and cinnamon into nut mixture and pour onto greased 15X11 baking sheet, spread with heat resistant spatula
6. Chill for 20 minutes, break into pieces.

TIP: Lightly coating the measuring cups, spoons, and spatula with non-stick cooking
spray makes it easier to maneuver the brittle when hot and also makes for easier cleanup.

Makes about 3/4 lb brittle
