Jam and Peanut Muffins

    1 cup flour
    1 teaspoon salt
    1 teaspoon baking powder
    1/2 cup sugar
    2 eggs, beaten
    1/2 cup milk
    1 cup peanuts, chopped
    1/2 cup jam

Place flour, salt, baking powder and sugar in a bowl. Add eggs, milk and peanuts. Mix well. Drop batter into paper lined muffin tins half way. Add a teaspoon of jam in the centre then cover with more batter. Makes 12-18.
