Fritata Goes Nuts

    1 pound cooked medium rare Lamb or Pork
    2 cups blanched peanuts
    16 ounces of shredded cheese (I use 4 cheese blend)
    12 large eggs, ( MUST be vegetarian/Cage free)
    1/2 cup fatfree cream
    herbs, paprika to garnish

Spray a large glass pan with nonstick spray- coat well. Preheat oven to 325. Cut meat into bite sized chunks, distribute in pan, add handfuls of peanuts, evenly top with shredded cheese. In large mixing bowl, beat eggs until frothy, whisk in cream. Pour into pan, garnish if desired. Bake 40-60 minutes or until knife inserted comes out clean. Plate. Best served with a side of salsa. Feeds 8

Note: Beef and chicken are both too bland for this recipe.
