Derby Peanut Pie

    2 eggs, beaten
    1 cup sugar
    1/2 cup flour
    1/2 cup butter, melted and cooled
    1 ( 6 oz.) pkg. semi-sweet chocolate morsels
    1 cup chopped peanuts
    1 teaspoon vanilla extract
    1/2 teaspoon Bourbon whiskey
    1 unbaked 9 inch pie shell

    Topping:

    1 cup heavy whipping cream
    1 Tablespoon Bourbon whiskey
    1/4 cup powdered sugar

Combine eggs, sugar, flour, and butter. Beat with electric mixer just until blended. Stir in chocolate morsels, peanuts, bourbon, and vanilla extract. Pour into pie shell and bake at 350 degrees for 45 to 50 minutes. Set aside and cool for 15 minutes.

Topping:

Beat whipping cream and bourbon until foamy. Gradually add powdered sugar and beat until stiff peaks form. Serve in dollops atop warm pie....................."To die for"!
