Confetti Bananas
6 Large Bananas, Peeled (chilled or frozen)
1 Cup Chopped Peanuts
1 Cup Creamy Peanut Butter
1 Cup Shredded Coconut (shredded or chopped)
12 oz. Milk or Dark Chocolate
12 oz. White Chololate
Wax Paper
1. Melt milk chocolate using microwave or double boiler.
2. Dip each banana completely in milk chocolate and set on wax paper. Chill for 15 minutes.
3. While bananas are chilling, melt white chocolate.
4. Once first chocolate layer is firm, dip each banana half way into white chocolate. Place on wax paper and chill for an additional 15 minutes.
5. While bananas are chilling for the second time, melt peanut butter. Add coconut and chopped peanuts to the melted peanut butter and stir until combined.
6. While the mixture is still hot, spread it on a clean sheet of waxed paper. Roll chilled bananas in mixture (press slightly to make sure it sticks).
7. Chill bananas for an additional 5 minutes and serve! These may also be frozen for up to one month.
