Coconut Peanut Butter

    2 cups fresh roasted peanuts, shelled
    4 tablespoons safflower oil
    1 teaspoon salt
    1 tablespoon brown sugar
    1/3 cup coconut milk
    1/2 cup flaked coconut

Combine peanuts and safflower oil in blender. Pulse until coarsely ground. Add salt and brown sugar. Continue to puree until smooth, scraping down sides frequently. When mixture is smooth add coconut milk and flaked coconut. Puree a moment more.
Store in refrigerator.
