Cinnamon Peanut Brittle (microwave)

    1 cup sugar
    1 cup redskin peanuts
    1/2 cup corn syrup
    1 Tbsp molasses
    1 Tbsp butter
    1 tsp. cinnamon extract
    3/4 tsp baking soda

Combine sugar, peanuts, corn syrup, and molasses in a microwave-proof mixing bowl and microwave on high for 3 minutes. Stir and microwave high for 3 more minutes. Next, stir in butter and cinnamon. Microwave on high for 1 minute and then remove from the microwave. Stir in the baking soda. Spread on a foil-covered baking sheet and allow to cool. Break into pieces. Makes about a pound of cinnamon candy!
