Brown Rice and Peanut Salad

Combine

    4 c. cooked brown rice
    1 c. coarsely chopped VIRGINIA PEANUTS
    1 c. chopped red bell pepper
    1 c. chopped green bell pepper
    1 c. chopped green onions

Mix dressing in separate bowl:

    1 c. plain yogurt
    1/2 c. mayonnaise (regular or low fat)
    2 T. balsamic or red wine vinegar
    2 cloves garlic, chopped
    1 tsp. powdered cumin (or more, to taste, after making salad)
    1/2 tsp. chili powder
    1/4 c. chopped cilantro

Fold dressing gently into rice mixture. Chill well. Serves 6-8
