Banana Peanut Chip Cookies

    3 bananas, mashed
    1 cup peanuts
    1 cup whole-wheat pastry flour
    1 tsp. seasalt
    1 tsp. cinnamon
    1/2 cup chickpea flour
    2 tsp. Baking Powder
    1 tsp. vanilla
    1/2 cup skim milk powder
    1/2 cup extra-virgin olive oil
    1/2 cup yellow sugar, packed
    1/2 cup oat bran
    1 cup peanut butter chips

Preheat oven to 350 degrees Fahrenheit. Add bananas, peanuts, flour, salt, cinnamon, chickpea flour, baking powder, vanilla and milk powder in a bowl. Stir well until blended. Add oil, sugar, oatbran and chips. Stir well until blended. Drop by tablespoonfuls, 1 inch apart. Bake for 12-15 minutes. Makes 20-30 cookies.
