Baby Spinach Salad with Blue Cheese, Dried Cherry Flavored Cranberries & Honey Roasted Peanuts

    2 tablespoons extra-virgin olive oil
    2 tablespoons balsamic vinegar
    Kosher salt and freshly ground black pepper, to taste
    1 (10-ounce) bag pre-washed baby spinach
    1/2 cup Craisins®, cherry flavored dried cranberries
    1/3 cup chopped honey roasted peanuts
    4 ounces blue cheese, crumbled  (Feta cheese may be used if preferred)

In a small bowl, whisk the olive oil with the vinegar and season the vinaigrette with salt and pepper. In a large bowl, toss the spinach with the Craisins and honey roasted peanuts. Add the vinaigrette and toss well. Add the blue cheese, toss the salad lightly and serve.
