Asparagus in Peanut Butter Sauce 3 garlic cloves, peeled and thinly sliced Heat oil in a saute pan to medium-low. Add sliced garlic and saute. Be careful not to burn the garlic. Once garlic has softened a bit, add asparagus. Saute for 10 minutes. Add 1/2 cup of chicken stock and bring to a boil. Once boiling, turn heat to simmer and cover the pan. Simmer for 10 minutes or until the asparagus is just tender (be careful not to simmer for too long otherwise the asparagus will be soggy). Stir in 3 tbsp of peanut butter and let it sit for a few minutes to soak up the flavors. Ameena Rafanan |
