Aromatic Peanut Rice
2 cups rice. preferably Basmati rice.(Can be found easily in Sams Club/indian grocery)
pinch salt
1 c. good earth peanuts(fried in little butter)
bunch of curry leaves/coriander leaves
1 t. turmeric
juice of 1 lemon
1 t. cumin seeds
1 stick cinnamon, 1 bayleaf, 1-2 cloves
1 T. butter/cooking oil
Wash the rice and soak for 10 min in 4 cups water.
Heat a pan with butter/cooking oil.
Add the cumin seeds, cinnamon stick, bay leaf, cloves and saute.
Add the curry leaves, turmeric, salt and finally add the rice.
Cook till rice is fluffy and well done.
Garnish with coriander leaves and fried good earth peanuts on top.
Serve hot with fresh low fat yogurt.
